Served them along side some olive-oil, lemon, garlic, thyme, &amp;amp; pepper marinaded then grilled Mahi-Mahi. OMG! It was awesome! The veggies are so beautiful! I love all the colors and the flavors were rockin! Oh, also I didn't have cherry tomatoes, I had heirlooms but they added to the colors, it was fabulous! Also, none of that fancy lettuce, I used red leaf. ;) lol my BF was raving about every bite! &amp;amp; he LOVED the veggies! He rarely eats zucchini or tomatoes, tonight he gobbled them up!
